Chicken fajita pasta

Simple one-pot pasta dish. A perfect blend of Tex-Mex flavors.

Instructions

  1. Heat the oil in a large pot over high heat.
  2. Add the chicken and cook until no longer pink, 10 minutes, then remove from the pot.
  3. Add the bell peppers and onion and cook until the onion is translucent, about 10 minutes.
  4. Add the chicken back to the pot, along with the spices, and stir until evenly coated.
  5. Add the milk and the penne, stirring constantly to prevent the pasta from sticking.
  6. Cook for about 20 minutes, until pasta is tender and the milk has reduced to a thick sauce that coats the pasta.
  7. Add the cheese and mix until melted.
You can add mushrooms, jalapeƱos and vary the type of cheese and quantity of chili powder.
